I got tired of buying Jammie Dodgers for him. It was time for this home cook to flex her culinary muscles and make them at home! I would bake them every Christmas and oh my son longed for the season.
Jammie Dodgers is a sort of cross between a sugar cookie and a shortcake because of the kind of texture they have. The beautiful cookie is made of two cookies that are sandwiched with raspberry jam.
What makes them very appealing is the tiny hole in the middle of the top cookie. The cookie usually has a heart shape or circle but the classic jammie has a love heart in the middle.

Homemade Jammie Dodgers
Ingredients
- 1 cup Butter
- ⅔ cup Granulated sugar
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 2 ¼ cups Flour
- ¼ teaspoon Salt
- ½ cup Raspberry Jam
Instructions
- In a mixing bowl of a stand mixer with the paddle attachment, cream the sugar and butter until light creamy and pale in color. You can use an electric mixer as well. This step takes about 3 to 5 minutes.
- Add the egg and keep mixing at high speed until fully incorporated, pour in the vanilla extract and mix well.
- In another mixing bowl, whisk the flour and salt, Sift the flour mixture into the bowl containing wet ingredients. Mix with a spatula then use your hands to make a soft dough ball.
- Place the formed dough into a greased bowl and cover with a plastic wrap. Chill the dough for 30 minutes.
- On a clean floured surface, roll out the dough into a rectangle of ¼ inch thickness. Deep the cutter in flour and the cut circles. Use a round cookie cutter to cut out the circle with patterned edges.
- Arrange the cutout cookies on two rows on the tray. On one column cut out the small love heart shapes with a small love heart fondant cutter. Set the plugs aside on the baking tray.
- Spoon ¼ spoon of jam and place it at the center of the bottom cookies then cover with the perforated cookie. Gently flattened the two cookies sandwiching the jam and sticking the two cookies together. Arrange the Cookies on a baking sheet lined up with baking paper,
- Bake them for 12 to 15 minutes in the middle rack position in the oven. Once ready, let them cool on the baking tray for 5 minutes before carefully transferring them onto a cooling rack.
- Enjoy the cookies warm with a cold glass of milk or a hot cup of coffee. These delicious treats make the perfect dessert after a holiday dinner.
