Easter eggs are her favorite, be it in cookie form or rice krispies. She jumps up and down with joy whenever the delicious scent of melting butter and marshmallow wafts through the air.
This recipe works for me anytime snacks are required throughout the year. We tweak the recipe to suit the season. I love this recipe because:

Ingredients And Substitution.
Rice Krispies - are the main ingredients giving the easter eggs their shape and structure, you could substitute with cornflakes or fruity pebble cereals. They have no distinct flavor, easily absorbing the marshmallow and butter flavor.
Mini-Sized Marshmallows- these pillow-soft candies have a lovely maple-like flavor. When heated, they melt to form a sticky creamy mixture that later holds the rice krispies together.
Butter - enriches the creamy mixture as well as distinct lactic flavor elevating the deliciousness of the Mini Krispies Easter Eggs. I love cooking with butter 🙂.
Gel Food Color or powdered food color - food color gives the Easter Eggs the Spring color palette. Pink, violet, light green, light blue, and yellow are mostly used to color treats during this season.

- Medium-sized heavy-based saucepan
- Rubber spatula
- Microwave or cooker
How To Make Rice Krispies Easter Eggs.
Measure all the butter, marshmallows, and rice krispies. Divide the three ingredients into 5 batches or according to the colors you would want for your Easter eggs.
In a medium heavy-based saucepan, melt the butter and marshmallow over low heat. You can melt the butter and mini marshmallows in a microwave for 1 or 2 minutes.
Melt the butter and marshmallows in 5 batches as you stir each food color of your choice. Use the rubber spatula to mix until the food color is fully incorporated into the mixture.
Pour in the mini Rice Krispies in each saucepan or bowl with your preferred colored marshmallow mix.
Fold and mix until the rice krispies are completely covered with the creamy marshmallow and butter mixture.
Shape Easter eggs using your hands or Easter egg molds and set aside to set.

Can I freeze my Mini Rice Krispies Easter Eggs?
Oh yes, these eggs freeze better than the real eggs 😀. Once set and dry, slip them into a freezer-friendly bag or container. They can freeze for up to 2 months.
How do I store my Mini Rice Krispies?
To keep them dry and crispy, store the easter eggs in an airtight container at room temperature for 5 days.
Chef Tips.
Use fresh ingredients, stale marshmallows do not melt as required, in addition, do not use cola-flavored marshmallows as the gas will affect the way the marshmallows melt.
Remember to add food color to the creamy mixture once the marshmallow and butter are completely melted.
Do not add the food color after folding the rice krispies into the creamy mixture. The food color cannot be absorbed by the coated marshmallows. You might end up emptying the food color container 🙂.
