    Mint Chocolate Aero Cake.

    I long to make this delicious cake that stands out in color, flavor, and texture. It is not just a regular cake, no. You have found a cake that you will get hooked on! Chocolate and mint make an outstanding couple in any confectionery.

    My children do not get tired of having it on almost all their birthdays! Aero mint chocolate snack bar is an all-time favorite snack. Making a cake inspired by a mouth-watering snack is the highlight of any get-together.

    You do not have to be a skilled baker to make this cake, just follow the recipe and tips provided. Let's look at what you need to make this cake.

    Ingredients

    Chocolate cake

    Light brown sugar

    You can use caster sugar in place of light brown sugar or more nutritious sweeteners such as stevia powder or coconut sugar.

    Butter/ vegetable oil

    Most of the recipes call for butter, however, vegetable oil yields a lighter and spongier cake. Butter adds a delicious flavor to the chocolate cake.

    Milk

    You can use milk, sour cream, or buttermilk to enhance the moisture in the chocolate cake.

    Peppermint oil

    Oh my, I would not substitute this special oil that introduces a fresh minty flavor that can never go unnoticed.

    Eggs

    In this recipe the many eggs used enrich the batter as well as increase the volume of the cake, making it rise. You can omit the eggs and make an eggless chocolate cake.

    Buttercream frosting

    Butter

    You can use butter or whipping cream to make your frosting.

    Regulate the amount to the desired sweetness

    Milk

    Milk makes the frosting more creamier if the frosting gets thick.

    Green food coloring

    Green food coloring is great as it compliments the green color of mint!

    Flavors the green buttercream perfectly

    Cocoa powder

    Chocolate frosting is one of my favorites, the earthy and bitter undertone just does it.

    How to make the Mint Chocolate Aero Cake

    Preheat the oven to 150C/Grease two 6-inch baking tin.

    Separate the egg yolks from the egg whites. In a large mixing bowl, beat the egg whites until light and fluffy.

    Gradually add the butter/ vegetable oil and sugar and keep beating until fully incorporated. You can use a handheld electric mixer or stand mixer with the whisk attachment.

    In another bowl, whisk the dry ingredients until they are thoroughly mixed. Sift the dry ingredients into the egg mixture, one cup at a time. Use a rubber spatula to gently fold the cocoa and flour mixture, be careful not to deflate the butter.

    Pour the cake batter into the two greased pans and bake them for 20 minutes.

    Use a wooden skewer to check readiness, a clean skewer confirms the readiness. Let the cakes cool on a wire rack for 10 minutes then remove them from the pans.

    Once the cakes are completely cooled, frost them as desired with mint-flavored and chocolate butter frosting.

    How to make the Butter frosting recipe

    Using an electric mixer, beat the butter until light. Sift in the powdered sugar and beat until creamy, add some milk if the frosting is too thick.

    Divide the frosting into two batches in separate bowls. Add green coloring food color to one and cocoa powder to the other.

    You will add ½ cup of milk to the chocolate frosting because cacao powder will absorb all the moisture from the frosting making it dry)

    Decorating the Mint Chocolate Aero Cake

    Place the cakes on a turntable. Trim the tops of the cakes to ensure that the cakes are flat and leveled.

    Apply some buttercream on the turntable and place one of the cakes. Sprinkle some sugar syrup on the top of the first cake though this step is optional. Pipe some rosettes or a layer of chocolate buttercream and place the second cake layer.

     Use cut straws to hold the two cakes together. Frost the two cakes as you desire, and sprinkle some chopped Aero mint chocolate to garnish the cake.

    (I did not find the Aero Mint Chocolate at our local grocery store, but used plain Aero Chocolate to garnish the cake.)

    Why did my cakes dome and crack at the center?

    • Oh, how we long for that professional flat and leveled cake that is so easy to frost. Here are a few tips that will save your cake from cracking and doming.
    • Invest in an oven thermometer and bake the chocolate cake at the recommended optimal temperature. Very high temperature makes the cakes rise prematurely causing the dome and crack.
    • Use cake strips to lower the rate of rising during the baking process. Cake strips are either bought or homemade. I make mine by dipping kitchen towels in water, folding them to the height of the baking tin, and wrapping them with aluminum foil.

    CHEFS TIP

    Do not over-mix your cake batter. Gently fold in the flour and use a spatula to mix. Over-mixing makes your chocolate tough and rubbery because the gluten strands in the flour have been activated.

    • 70 grams Mint Chocolate Aero bars
    • 1 tablespoon Green Food Coloring
    • 1 tablespoon Cocoa powder
