Ingredients and Substitutes
Cookie dough
Butter - Butter adds moisture to the cookies as well as a sweet milky flavor. The vegetable oil of your choice will still work perfectly fine.
Eggs- enrich the cookie dough, giving the cookies a little rise.
All-purpose flour - All-purpose flour works perfectly.
Toppings
Sugar glaze
Powdered sugar
Milk
Strawberry Shortcake Crunch
Golden Oreos
Golden Oreos are the best, taking up the pink color from the strawberry jello. They add the crunch to the cookies making them really yummy!
Melted butter
Adds moisture and flavor to the crunch and holds the particles together.
Strawberry Jello crystals
Strawberry Jello crystals are the game changer, the tangy and sweet crystals make this crunchy taste like jelly!
A dash of pepper (optional)
A hot twist tastes amazing but is optional.
How to make Strawberry Shortcake Sugar Cookies
Preheat your oven to 150C, line the baking sheet with baking paper. Measure your ingredients and set aside.
In a mixing bowl whisk the flour, baking powder, and salt until thoroughly combined.
In another mixing bowl cream butter and sugar until light and fluffy. Add in the eggs, one at a time with the vanilla essence. Pour the flour into the creamy mixture in two batches.
Mix until no dry streaks can be seen. Scrape down the side of the bowl using a spatula.
Use an ice cream scoop to scoop the cookie dough and arrange them onto the baking tray leaving a space of about 2 inches between them. Bake them for 10 minutes until slightly golden brown in color.
Pop them out of the oven and let them completely on the cooling wire rack.
Prepare the frosting, sift the powdered sugar, and remove any lumps into a mixing bowl. Add the milk and stir to a smooth-flowing consistency. The fun part begins!
You could separate and add food color to one batch according to your color preference.
Frost each cookie with the pink frosting. Drizzle the white frosting making beautiful patterns. Sprinkle the strawberry crunch and serve!
Enjoy as a dessert or with a hot cup of unsweetened coffee.
How to make strawberry crunch
In a food processor, crush the golden Oreos to fine crumbs. You could crush the Oreos in a ziplock bag using a rolling pin. A food processor is more efficient.
In a mixing bowl, add the crushed Oreos, strawberry jello crystals, and melted butter.
Sprinkle a tinsy winsy amount of hot pepper if you want to take your taste buds to some adventure. Stir all the ingredients till they are thoroughly mixed.
Expert Tips
For best results always use ingredients at room temperature, the eggs, and the butter.
Measure the dry ingredients precisely by using the scoop and level method that ensures no excess flour is added to the cookie dough.
