Ingredients

  • 1 cup Pumpkin puree
  • 2 ½ tbsp. Pumpkin Pie Spice
  • 1 cup Chocolate Chips
  • 2 cups Milk
  • 2 ½ cups Original Pancake Mix
  • 1 Egg
  • 3 tbsp. Brown Sugar
  • 2 tbsp. Vegetable Oil

Instructions

  • In a mixing bowl, whisk the eggs till light and fluffy, add vegetable oil, milk, and pumpkin puree.
  • In a separate bowl, combine the pancake mix flour, pumpkin pie spice, brown sugar, and chocolate chips. When using all-purpose flour make sure to mix the dry ingredients thoroughly.
  • Add them to the pumpkin puree mixture you set aside and stir. Ensure you do not overmix the batter.
  • Heat a lightly oiled frying pan and scoop the batter into the frying using ¼ cup for each pancake.
  • Allow the pancakes to cook for approximately 2 minutes on each side until they brown.
