Ingredients

  • ½ cup Drained black beans
  • 2 Avocados Peeled and Sliced
  • 1 Onion Sliced
  • 1 Bell pepper Sliced
  • 1 tbsp. Taco seasoning
  • 4 Tortillas Wraps soft medium flour
  • 1 tbsp. Olive oil
  • 1 Lime
  • ¼ cup Minced cilantro
  • 1 cup Light Mexican cheddar cheese
  • ½ cup Oil For grilling

Instructions

  • 1. Add 1 tablespoon of oil and sauté the onion and bell pepper over medium-high heat until tender in a pan.
  • 2. Add the ½ cup of drained black beans and taco seasoning and cook for one minute. Pour the mixture into a bowl and set it aside.
  • 3. In another bowl, mash the avocados with a fork. Stir in the cilantro and add the juice of ½ lime. Add some salt and pepper to taste.
  • 4. Spread ¼ of the mashed avocado mixture onto half a tortilla.
  • 5. Top with the bean mixture and ¼ cup of cheese. Fold the tortilla to close over the veggies.
  • 6. Repeat this process until all the tortillas are filled.
  • 7. In a pan, drizzle a light layer of oil and cook the filled tortillas on medium-high heat on each side until the outside is crispy and the cheese has fully melted. Cook for 5 minutes on each side.
