How to make the Mint Chocolate Aero Cake
Preheat the oven to 150C / Grease two 6-inch baking tin
Separate the egg yolks from the egg whites. In a large mixing bowl, beat the egg whites until light and fluffy.
Gradually add the butter/ vegetable oil and sugar and keep beating until fully incorporated. You can use a handheld electric mixer or stand mixer with the whisk attachment. In another bowl, whisk the dry ingredients until they are thoroughly mixed. Sift the dry ingredients into the egg mixture, one cup at a time.
Use a rubber spatula to gently fold the cocoa and flour mixture, be careful not to deflate the butter.
Pour the cake batter into the two greased pans and bake them for 20 minutes. Use a wooden skewer to check readiness, a clean skewer confirms the readiness.
Let the cake cool on a wire rack for 10 minutes and remove them from the pans.
Once the cakes are completely cooled, frost as desired with mint-flavored and chocolate butter frosting.
How to make the Butter frosting recipe
Using an electric mixer, beat thebutter until light. Sift in the powdered sugar and beat until creamy, add somemilk if the frosting is too thick.
Divide the frosting into two batches in separate bowls. Add drops of green coloring food color to one and cocoa powder to the other.
Add ½ cup of milk to the chocolate frosting because cacao powder will absorb all the moisture from the frosting causing the frosting to dry).
Use a piping bag and nozzle of your choice to decorate the cake.
Break the bar into pieces and use them to garnish the cakes. These bits and pieces of the aero mint bar attract all the children to this cake!
