Strawberry Crunch Cheesecake Cones

Ingredients

  • 6 cones Ice cream waffle

No bake Cream Cheese Mix

  • 1 cup Whipping cream
  • 1 cup Full-fat cream cheese (340grams)
  • 100 grams Granulated sugar
  • 7 grams Confectioner's sugar
  • 30 grams Sour cream
  • 2 teaspoons Lemon juice
  • 1 teaspoon Vanilla essence

Strawberry Filling

  • 2 cups Fresh or frozen strawberries
  • 1 cup Granulated sugar
  • 1 teaspoon Vanilla essence
  • 1 pinch Salt
  • 1 teaspoon Strawberrycrystals
  • 1 lemon Lemon

Strawberry Crunch

  • 10 Golden oreos
  • ¼ cup Melted butter
  • Strawberry jello crystals
  • A dash of pepper (optional)

Instructions

Ice cream cone

  • You can buy or make your own, especially if you own a waffle cone maker pan.

Cream cheese filling

  • Whip the cold heavy cream in a mixing bowl at medium-high speed till stiff peaks form. You could use a handheld mixer or a stand mixer. Set aside
  • In a separate bowl, beat cream cheese and granulated sugar until perfectly smooth and creamy. Add powdered sugar, sour cream, lemon juice, and vanilla essence.
  • Add in the whipped cream and mix gently with a rubber spatula.
    Cover the bowl with a cling film and let it chill in the fridge for about two hours or even overnight for more stability.

Strawberry Crunch

  • Crush the Oreos in a food processor, and pour them into a mixing bowl.
  • Add melted butter and strawberry jello crystals. Mix well and bake for 8 minutes. Let it cool completely before use. (Baking the mixture is optional.)

Strawberry filling

  • Core the strawberries and add them into a saucepan together with sugar, vanilla essence, water, and slurry made from water and flour.
  • Crush the strawberries with a potato masher and stir continuously on medium heat for about 8 minutes.
  • Let the filling cool completely then stir in the lemon juice.

Glaze

  • In a mixing bowl, mix powdered sugar with lemon juice or milk. Drizzle the glaze on the cone.
