Strawberry Shortcake Sugar Cookies

Equipment

  • Measuring cups and spoons
  • 1 Mixing bowl
  • 1 Parchment paper
  • 2 Baking trays
  • 1 Electric handheld mixer
  • 1 Silicon spatula

Ingredients

  • ¾ cup Butter
  • 1 ½ cup sugar
  • 2 eggs Large
  • 2 tsp. vanilla
  • 2 ¾ cups all-purpose
  • ½ tsp. salt
  • ½ tsp. baking powder

Instructions

  • Preheat your oven to 150C, line the baking sheet with baking paper. Measure your ingredients and set aside.
  • In a mixing bowl whisk the flour, baking powder, and salt until thoroughly combined.
  • In another mixing bowl cream butter and sugar till light and fluffy. Add in the eggs, one at a time with the vanilla essence.
  • Pour the flour into the creamy mixture in two batches. Mix until no dry streaks can be seen. Scrape down the side of the bowl using a spatula.
  • Using an ice cream scoop or table spoon to scoop the cookie dough and arrange them onto the baking tray leaving a space of about 2 inches between them.
  • Bake them for 10 minutes until slightly golden brown in color. Remove the cookies from the oven and let them cool completely on the cooling wire rack.

Notes

Prepare the frosting. Sift the powdered sugar and remove any lumps into a mixing bowl.
Add the milk and stir to a smooth-flowing consistency. You could separate and add food color to one batch according to your color preference.
Frost each cookie with the pink frosting. ( I forgot to make the pink frosting 😣 and the drizzling part but the cookies were equally delicious).
Drizzle the white frosting making beautiful patterns. Sprinkle the strawberry crunch and serve!
