    This Duncan hines lemon cake mix recipe is one of the easy lemon cake recipes you can make at home. It is an excellent dessert with a rich lemon flavor perfect for a family reunion.

    It reminds me of the blue ribbons lemon cake that was featured in an Oprah Winfrey show! It’s one of my favorite recipes to bake when I'm craving lemon desserts.

    Instead of a frosted layered cake, we opted to bake our lemon batter in a bundt cake pan. Serving this delicious bundt cake is one of the favorite ways of ending a meal, especially when preceded by fatty meats.

    It is believed that lemon breaks the fats down …simply put, lemon and sugar blend amazingly.

    As the men and boys embarked on the bbq mission, the family girls began working on the dessert. We make this every time we have a family reunion, it is among our family favorites.

    This easy recipe is great for avid home bakers curious to impress their guests and families. I baked this easy lemon bundt cake recipe using an easy cake mix box; Duncan Hines lemon supreme cake mix is one of the best lemon cake mix recipes.

    The instructions on the box are straightforward to follow, requiring little time and effort.

    It works well if you prepare the lemon curd a day before. The ingredients are easily accessible; we made an online order for some ingredients and the bundt baking pan and did a curbside pickup.

    Substitutions

    Though we used a cake mix box recipe, we did a bit of substitution to achieve a more delicious and homemade taste.

    We replaced the water with buttermilk, used four eggs instead of three eggs, and melted butter instead of a cup of vegetable oil. You will be delighted by the outcome when you enrich the lemon cake recipe in this manner.

    To increase moisture and flavor and even prolong the shelf life of the easy lemon dessert, I added a box of instant lemon pudding to the recipe.

    Glaze Ingredients

    • 5g lemon zest
    • 3 eggs
    • 1 cup of sugar
    • 50g of butter

    How to make it

    Beat the eggs with sugar in a small bowl.

    Heat the mixture over a water bath as you continuously stir with a spatula for 10 minutes.

    Use a wooden spoon to test the consistency: deep in the mixture and draw a line on the spoon with your finger .. the line you have drawn should remain.

    Remove from the water bath and strain the mixture into another mixing bowl. Add butter and the lemon rind and mix.

    Pour into a mason jar and seal, then store it in the refrigerator to thicken. Use after a day or two for best results.

    ( Our lemon curd took a long time to gel, so I added some icing to it, making it a sweet-tasting lemon frosting.)

    • 1 Bundt cake pan

    Ingredients
      

    • 432 grams Duncan Hines signature lemon supreme cake mix
    • 1 cup Milk
    • 4 large Eggs
    • ½ cup Melted butter
    • ¼ cup Confectioners sugar
    • 95 grams Instant pudding mix
    • 2 Tablespoon Lemon juice
    • 1 teaspoon Finely grated lemon peel or lemon zest, or orange zest.
    • 1 teaspoon Lemon extract (optional)
    • 1 teaspoon Pure vanilla extract (optional)

    Instructions
     

    • Grease a bundt cake pan with cooking spray or a layer of shortening and then dust flour. Preheat your oven to 150 degrees Celsius or 350 degrees F.
    • Whisk the cake mix, confectioners sugar, and instant pudding mix in a large bowl using an electric hand mixer.
    • Add one egg at a time and keep beating using the electric mixer at high speed. Lower the speed to medium speed and add buttermilk and melted butter.
    • If you have a cup of fresh blueberries, toss them at this point, a lemon blueberry cake is also a perfect cake.
    • Continue mixing until a soft, smooth batter is formed. Using a rubber spatula, pour batter into the prepared pan.
    • Level out the top of the cake batter and put it in the preheated oven, preferably on the middle rack.
    • The average bake time for this cake is 45 minutes; check if it's ready by inserting a wooden skewer. When the skewer is clean, get the cake out of the oven and let it cool in the pan for about fifteen minutes. Remove from the pan to cool cake completely on a wire rack.

    Cake Decoration

    Drizzle the lemon curd with icing on the top of the entire cake using a teaspoon. This gives it a nice lemon glaze. You can decorate with lemon slices and blueberries as desired.

    Next time I make this lemon cake, I will melt white chocolate chips and mix them with cool whipping cream; add some cream cheese, yum! This will perfectly frost an entire layered cake. Meringue chips will garnish the cake!

    This recipe makes the best lemon cake I have ever tasted; it's delicious, moist, and rich in flavor and texture.
