    Don’t we all just love potatoes? Generally, potatoes have always been a personal favorite. You can do so much with a potato.

    I won’t go into the details because if I do I would not be able to stop, so let’s just focus on today’s super amazing recipe.

    This recipe is all about potatoes, with very few ingredients added to it.

    These baked potatoes are quite easy to make and the best part is that they can be served with all your meals, including breakfast.

    You can use it as a side but if you are a potato lover like me you can eat them as your main meal.

    This recipe has very few ingredients which makes it cost-effective and also saves you a lot of time in the kitchen. The potatoes are soft and creamy on the inside and crispy on the edges.

    You can also vary the seasoning based on what is in your spice cupboard to achieve any desired taste since potatoes go great with pretty much anything.

    What you need for this recipe

    A bunch of ingredients in bowls and a wooden cutting board.

    Potatoes

    Potatoes come in various varieties and you can definitely pick your favorite. Select medium-sized potatoes, all of the same size so the slices can be uniform in size. Potatoes have a mild taste and easily absorb any seasoning.

    Cheese

    Cheese and potatoes have always paired perfectly in various savory dishes. A mixture of Cheddar and mozzarella is great for this recipe. The tang and lactic flavor of cheese adds an amazing flavor to the dish.

    Mozzarella melts nicely when baked, holding the sliced potatoes together. A sprinkle of parmesan cheese will elevate the dish to another level, you know.

    Olive oil

    Olive oil is the best choice of oil, however, you could use your favorite vegetable oil. Oil gives the potatoes a luscious look and gives them pleasant crispy edges.

    Seasoning

    In this recipe, we used paprika, and garlic powder hmm! You can add some heat to the potatoes by sprinkling freshly cracked pepper or red pepper flakes.

    The best way to store any leftover potatoes is to store them in an airtight container and refrigerate for not more than 3 days.

    Serving suggestions

    You can serve baked potatoes with eggs and bacon for breakfast. This way, your family can have a filling breakfast that will give them the energy to kick-start their day. For lunch and dinner, serve them with a juicy steak, chicken, pork, or meatloaf.

    Avoid serving them with other starchy dishes like rice. If you are going for a healthier option, serve them with a green salad, preferably one with a creamy dressing.

    Ingredients
      

    • 4 large Potatoes
    • 2 Green Onions Finely chopped
    • 1 tsp. Garlic Powder
    • 1 tsp. Paprika
    • 1 cup Cheddar Cheese Shredded
    • 1 tsp. Salt
    • 2 tbsp. Olive oil

    Instructions
     

    • Preheatthe oven to 375 degrees.
    • Spray your baking dish with spray and set it aside.
    • Wash and slice the potatoes. Each slice should be approximately ¼ inch thick.
    • Place the potatoes in the baking dish you set aside and cover it with a paper towel.

    Microwave Method

    • Microwave the potatoes on high for approximately 5 minutes or until the potatoes are almost soft.

    Top Stove Method.

    • If you don’t have a microwave, place the potatoes in a large pot, cover with water, and cook on medium-high until it boils then drain the potatoes and lay them in your baking dish.
    • Remove the potatoes from the microwave/large pot and lightly brush them with olive oil.
    • Sprinkle them with cheese, green onions, garlic, paprika, or any other seasoning of your choice. Make sure all potatoes are coated with the oil and seasoning. Place 5 to 4 slices of potatoes in a greased muffin tin.
    • Bake the potatoes in your preheated oven for 15 minutes or until the cheese is bubbly and the potatoes soft. Some parts of the potatoes will be golden brown in color.
    • Serve them hot on the side of your favorite vegetables and a cream.
