    After Eight Cookies have a special name! They surely make a perfect dessert after dinner.

    After Eight Cookies is inspired by a special-tasting snack that is flat in shape. After Eight Cookies are one of my favorite snacks.

    It is hard to fail to add an AfterEight Snack to my trolley during my shopping haul. They save the day when my energies run low. Easy to melt in your mouth, you don’t have to take a bite 😀.

    The amazing thing about the flat delicious chocolate is that it can be wrapped in cookie dough and baked.

    This gives the cookie a gooey and delicious center making the cookie standout in texture and taste.

    Ingredients And Substitutions.

    All-purpose flour

    All-purpose flour works perfectly in this recipe. However, you could replace this with gluten-free flour if you have someone who is gluten intolerant.

    Cocoa powder

    Cocoa powder gives the cookies a rich earthy chocolatey flavor and its dark color too. It gives a wonderful backdrop for after eight chocolates. I would not replace this ingredient.

    Peppermint extract

    Peppermint is a great friend of the chocolate flavor! Peppermint has a distinct, immense flavor that goes unnoticed.

    The fresh minty taste elevates the deliciousness of the cookies. If you do not have peppermint extract, don't you worry vanilla still blends beautifully with chocolate.

    After Eight Chocolates

    Wow! This is the secret ingredient in this recipe.

    The chocolates are wrapped with cookie dough and baked, you can imagine the result of baking the chocolate nestled inside the cookie dough. Aha, we are not replacing this chocolate you know…:

    Light Brown Sugar

    Using light brown sugar is the best sweetener, the color and texture contribute to the overall result of the cookie. Light brown sugar makes the cookies moist and adds a nostalgic molasses taste.

    Granulated and castor sugar still work well in this recipe, do not be afraid to substitute.

    • Mixing bowls
    • Electric mixer or Stand Mixer
    • Rubber spatula
    • Rolling pin
    • Measuring cups
    • Measuring spoons
    • Cookie cutters
    • Baking trays

    How After Eight Cookies Are Made.

    This is a simple recipe requiring no specialized baking skills. It takes a short time as well to come up with these exquisite cookies.

    In a mixing bowl of a stand mixer with the paddle attachment, cream the sugar and butter until light creamy and pale in color. You can use an electric mixer. This should take about 3 to 5 minutes for the best results.

    Add the egg and keep mixing at high speed until fully incorporated, add the peppermint extract and mix well.

    In another mixing bowl, whisk the flour, cocoa powder, leavening agent, and salt to form a uniform color. Ensure the flour and cocoa are thoroughly mixed removing any lumps.

    Sift the flour mixture into the bowl containing wet ingredients. Mix with a spatula then use your hands to make a soft dough.

    Place the formed dough into a greased bowl and cover with a p; plastic wrap. Chill the dough for 30 minutes.

    On a clean floured surface, roll out the dough into a rectangle of ½ inch thickness. Use a round cookie cutter to cut out the circle. Use a 3 inch cookie cutter s so they can have enough space to fit an After Eight Chocolate. Preheat the oven to 150C.

    Carefully place an After Eight Chocolate in the middle of each cutout cookie. Wrap it with the cookie dough, covering the After Eight Chocolate.

    Arrange the Cookies on a baking sheet lined up with baking paper, and leave 2 inches apart, that's to allow spreading of the cookies as they bake.

    Bake them for 12 to 15 minutes in the middle rack position in the oven. Once ready, let them cool on the baking tray for 5 minutes before carefully transferring them onto a cooling rack.

    Place an After Eight chocolate on top of each baked cookie. Enjoy the cookies while warm with a cold glass of milk or for dessert after dinner.

    How can I store leftover After Eight Cookies?

    Chocolate melts easily, it is good to refrigerate the cookies in an airtight container. These delicious cookies can last about 5 days in the refrigerator.

    Can I freeze After Eight Cookies? 

    Oh yes, the cookies freeze beautifully. You can freeze cookie dough while it's raw. Roll the cookie dough into balls to freeze them on a tray. Once frozen, place them in a freezer-friendly bag.

    Once baked, the cookies can be frozen as well. Separate the cookies with parchment paper squares. Freeze the cookies in a freezer-friendly bag.

    Use ingredients at room temperature to get the best results, especially the eggs.

    Measure the ingredients accurately. Use the scoop and level method, this way excess flour is returned to the main container. Excess flour alters the temper with the moisture level of the cookies.

    Do not overmix or over-knead the cookie dough, this makes the dough rubbery and tough instead of chewy and soft.
