Lemon zest and juice
Lemon zest and juice have this characteristic citric taste that I love. This tangy taste that has a puckering effect in your mouth flavors the chicken beautifully and makes the meat soft as well.
Oregano, thyme, rosemary
These herbs have their main origin in the Mediterranean, blend beautifully, and give an intense and crispy aroma to the chicken.
Chicken breasts
Honestly, Chicken breasts are my favorite portion of the chicken to cook with since it’s a lean cut of meat and convenient to use.
Here is the secret: I always buy organic chicken breast. I find the organic chicken has much more flavor and the texture is better.
Before seasoning my chicken, I pound it thinner to make it cook quicker and more evenly.
Substitutions
Olive oil can be substituted with any other vegetable oil such as Canola, but there’s something special about olive oil, If you have some, please use it for a greater outcome.
I wouldn’t substitute lemon juice or zest .. it will not be lemon-grilled chicken, right? 😊
Well if you ain’t a fan of chicken, you can replace the breasts with fish fillet. My family loves chicken, I have never had to use fish instead of chicken.
If your pantry doesn’t have fresh garlic, garlic powder will still give you the same flavor.
Equipment
You do not need specialized equipment to prepare this simple yet exquisite meal. You need to have an oven grill, mixing bowl, ziplock bags, and kitchen tongs.
How To Prepare Grilled Greek Lemon Chicken.
Preparing the chicken meat
Pound the chicken breast using a mallet (or a rolling pin) to make it thinner to make it cook quicker and more evenly.
This would be the time to marinate your chicken breast if you want to add some flavor to the chicken breast.
Mixing herbs with lemon juice.
Place the chicken breast in the mixture.
Marinate chicken for 2-5 hours.
Grill at 425 to 450 degrees F.
Making the marinade
In a mixing bowl combine all the ingredients till they are thoroughly mixed. Preferably you could use a mason jar. Pour in the ingredients, close the lid tightly, and shake vigorously.
Place the chicken into a ziplock bag. Pour in the mixed marinade onto the chicken.
Marinating
Let the chicken marinate in the fridge for 2 to 5 hours.
While marinating, mix the marinade and ensure you flip the bag of marinating chicken over halfway through to redistribute the marinade.
NB: Don’t marinate the chicken for more than 5 hours. Marinating it for too long can toughen it up and make it chewy. I do not recommend marinating the chicken breast overnight.
How to Grill Chicken
Grill chicken (ensure the grill is preheated grill for about 2-3 minutes) and cook through (about 4 minutes on either side).
Let the grilled chicken breast rest for 5 minutes before serving/cutting so that the juices can redistribute evenly within the chicken.

Ingredients
- ⅓ cup Lemon Juice
- ⅓ cup Olive oil
- 4 pieces Boneless chicken breast
- 1 tablespoon. Lemon zest
- 1 tablespoon. Salt and black pepper
- ½ teaspoon, Oregano
- ½ teaspoon. Basil
- ½ teaspoon. Thyme
- ½ teaspoon. Rosemary
- 1 cup Fresh parsley.
Instructions
- Mix all the herbs (except parsley), lemon juice, and olive oil in one bowl. Or combine them in a mason jar, shaking it vigorously.
- In a separate bowl, place the chicken breast pieces and pour the herb mixture on the chicken.
- Place the marinated chicken in a zip-lock bag and store the bag in the refrigerator for 2-5 hours.
- Keep turning the bag to ensure each part of the chicken gets the marinade.
- Meanwhile, preheat your grill over medium heat (to 425-450 degrees F)
- Brush the grill lightly with olive oil. Place the marinated chicken on the grill and let it cook for at least 5 minutes.
- Flip the chicken on the other side for even grilling. Grill it for another 5 minutes. (Use the instant-read thermometer to check the internal temperature- until the chicken registers 160-165 degrees F)
