    Crock Pot Chicken Pot Pie

    I am happy to share my new favorite comfort food- the delicious Crock Pot Chicken Pot Pie recipe.

    For all lovers of simple crockpot recipes, I can assure you that this recipe will not disappoint. There are times when life can be so hectic, you can rarely find time to slow down. Crockpot recipes come in so handy.

    This was inspired by my Chicken Parmesan Casserole Recipe on this site, and pairs well with Homemade Jammie Dodgers as a dessert.

    During my homeschool days, these recipes used to save the day when I failed to get time to prepare dinner.

    I would place ingredients  my ‘friend’ the crock pot in the morning and proceed with the school day's program. In the evening, the meal is ready waiting for me like a warm hug on a cold winter night.

    With all the flavors locked in there, meals that are cooked slowly remind me of my grandma's kitchen. Good things take time, the old saying goes.

    Why This Recipe

    It’s a very easy recipe since all you need to do is throw in the chicken, cream of chicken soup, water or broth, and the veggies in the crockpot and leave it to cook all day.

    Then in the last two hours, you can toss in the cut-up biscuits. ( I bake them before tossing them into the crock pot)

    My kids loved it because of the biscuits in the recipe. They were so involved in the preparation process and loved cutting up the biscuits.

    A mental note I made was that next time, I would increase the number of biscuits and add more water to the recipe for the kids since they really loved it. I used fresh veggies for this recipe.

    I included fresh carrots and green beans. However, if you have canned veggies, you can use those too.

    For this recipe, you can substitute the veggies and still have a delicious meal. For instance, you can use peas and celery, and will turn out just fine.

    This recipe is budget-friendly

    Definitely. This recipe cost me less than four dollars, and I was able to feed a family of 4.

    It doesn’t get more frugal for me than that! This is one simple, budget-friendly dinner idea you will love.

    WHAT YOU NEED

    Chicken breast

    Chicken breasts are awesome for this recipe however, any chicken on bone can work as well. You will shred the meat once it's cooked.

    Chicken broth

    Chicken broth is richer in flavor and nutrients, it's better than adding plain water to your meal.

    Mixed Vegetables

    You can use your favorite mix of vegetables. I love peas, carrots, and cubed potatoes. Vegetables are rich in nutrients and fiber.

    Biscuits

    Who does not like soft fluffy biscuits? They are a great comfort food and are filling as well. They are easy to make and take a short time to cook.

    How To Make Crock Pot Chicken Pot Pie

    Place the chicken pieces and chopped vegetables in a crockpot. Add the poultry seasoning and chicken soup cream and pour milk, cream of chicken and broth into the pot. Cook the food on low heat for 6 hours.

    Remove the cooked chicken from the pot and shred it into small pieces then place back into the pot. Cut the biscuits and bake them, then place them in the crock pot.

    Cook it on low heat for two hours, while stirring once every hour. Add some salt and pepper to taste. Serve while it’s still piping hot with some vegetables such as broccoli.

    How should I store leftover Crock Pot Chicken Pot Pie?

    Store the chicken and the biscuits separately in airtight containers in the refrigerator. They can last for 3 days in the refrigerator.

    PRO TIPS

    If you love your biscuits with a beautiful golden brown crunchy crust, I like mine that way so does my family.

    Bake the biscuits before adding them to a crock pot. Baking the biscuits improves the texture, but if you don't mind them being very soft and white in color, go ahead and place them in the crock pot before baking.

    Note: To save time, bake the biscuits a day before.

    Ingredients
      

    • 2 pieces Boneless and skinless chicken breasts
    • 1 tsp. Garlic Salt
    • 2 Cups Chicken broth or Water
    • 1 Onion Finely Chopped
    • 1 Portion Mixed Veggies Chopped
    • 1 can Chicken soup cream
    • 2 cups Milk
    • 1 tsp. Poultry Seasoning
    • 10 Biscuits
    • Pepper and salt To your own taste.

    FLUFFY BISCUIT RECIPE

    • 2 cups All-purpose flour
    • 1 ½ tbsp. Baking Powder
    • 1 teaspoon Granulated Sugar
    • ¾ teaspoon Salt
    • ½ cup Unsalted Butter (cold butter)
    • ½ tbsp. Melted Butter
    • 1 cup Milk

    Instructions
     

    • Place the chicken pieces and chopped vegetables in a crockpot.
    • Add the poultry seasoning and chicken soup cream and pour water and broth into the pot.
    • Cook the food on low heat for 6 hours.
    • Remove the cooked chicken from the pot and shred it into small pieces then place back into the pot.
    • Cut the biscuits, bake them for 15 to 20 minutes them place them on the chicken
    • Cook it on low heat for two hours, while stirring once every hour.
    • Add some salt and pepper to taste.
    • Serve the meal while it’s still hot.

    HOW TO MAKE FLUFFY BISCUITS

    • In a mixing bowl, mix the dry ingredients: sugar, and salt. Baking powder and flour until thoroughly mixed.
    • Work the butter into the flour using a pastry blender, fork, or your fingers too. Add milk and do not over-mix.
    • Roll the dough into a rectangle, fold it into half, and roll into a rectangle again.
    • Repeat the process to form a 5x10” rectangle.
    • Cut the biscuits with a cookie cutter and bake them at 180 C or 350 F in a preheated oven for 12 to 15 minutes until golden brown.
